Job Title: Junior Sous Chef

Position Overview:
The Junior Sous Chef supports the Sous Chef and Head Chef in managing daily kitchen operations, ensuring high-quality food preparation, consistency, and presentation. This role involves hands-on cooking, supervising sections, assisting with menu development, maintaining hygiene standards, and helping train and motivate kitchen staff.

Key Responsibilities:
· Assist the Sous Chef and Head Chef in the smooth running of the kitchen.
· Supervise and support kitchen team members, ensuring food quality and timing meet standards.
· Take responsibility for a specific section (e.g., grill, larder, or pastry) during service.
· Ensure all dishes are prepared according to recipes, specifications, and portion controls.
· Help with menu planning, recipe development, and daily specials.
· Maintain excellent standards of cleanliness, hygiene, and food safety (HACCP compliance).
· Assist with stock control, ordering, and minimising waste.
· Lead by example and foster a positive, professional, and team-oriented kitchen environment.
· Step up to cover Sous Chef duties in their absence.

· Sound knowledge of food safety, allergens, and HACCP standards.
· Organised and detail-oriented, with the ability to multitask during busy service periods.

Qualifications & Experience:
· Diploma/ Certificate III or IV in Commercial Cookery (or equivalent).
· Minimum 3–5 years of kitchen experience, with at least 1 year in a senior CDP or supervisory role.
· Experience in high-volume bistro style operation or quality-driven kitchens (club, pub, restaurant, or hotel environment).
· Experience high volume function catering operation

Working Conditions:
· Fast-paced kitchen environment requiring flexible hours, including weekends and public holidays.
· Standing for extended periods and lifting up to 20kg as part of daily dutie
