Tucked away in Coburg North, Back Alley Bakes is all about great bread, beautiful pastries, and good people. We're known for our sourdough, handcrafted pastries, and seriously tasty sweets – all made using fresh, local ingredients.We care deeply about supporting local producers, sustainable practices, and building a genuine community around good food. Our bakery is busy, creative, and full of energy – and we're now looking for another talented baker to join the crew.

The role

We're on the hunt for an experienced, passionate baker (minimum 2 years' hands-on experience) who loves early starts, great dough, and being part of a tight-knit team.

You'll work alongside skilled bakers and pastry chefs, helping create consistent, high-quality products that our customers line up for – rain, hail or shine.

What you'll be doing

* Baking sourdough, bread and pastry products from start to finish
* Weighing ingredients and preparing recipes with care and accuracy
* Mixing, kneading, shaping and proving dough
* Keeping a close eye on ovens and baking times to nail every batch
* Coordinating production runs (forming, loading, baking, cooling)
* Keeping equipment clean, safe and ready to go
* Using bakery machinery confidently
* Supporting and working closely with the rest of the team

What we're looking for

* At least 2 years' experience in sourdough breadmaking
* Pride in your craft and a sharp eye for detail
* Reliable, organised, and calm when it gets busy
* A great communicator and team player
* A genuine love of baking (and learning more)
* Availability for early starts (3am–4am), weekends and some public holidays
