DUTIES AND RESPONSIBILITIES:

The Chef is the \"HEAD OF KITCHEN\",
The CHEF is responsible for handling kitchen and efficient running of the restaurant, while maintaining a cost effective inventory levels.

Manage and administer \"Kitchen Operations\" - supervise kitchen staff

Assist the Owner/Manager in administration and management of the entire Restaurant.

Plan, Design & Pricing/Costing Menu

Consult with Manager/Owner for the items to be included in the MENU and recommend pricing.

Preparing and cooking Food as per the MENU and use expertise cooking methods.

Monitoring dishes prepared by Cooks and Kitchen Staff.

Assisting and suggesting Manager/Owner with regard to the Food and Labour Costs and ordering food supplies.

Assist with the receipt and examination of goods/supplies to ensure quality of standards and specifications are met

Assist with the management and maintenance of stock levels and stock ordering.

Kitchen staff roster and training other junior staff.

Assist in recruiting Kitchen Staff, Cooks and Waiting Staff. Impart training to them.

Regulating temperatures of Ovens, Grills, Tandoori and other cooking equipment/s.

Examining the Quality and Quantity of Food prepared as per the daily Menu.

Preserving the food as per the prescribed methods like freezing, marinating, seasoning etc.,

Preparing gravies, sauces, chutneys and other related items.

Decorating - portioning food, placing it on plates and adding gravies/sauces & salads/garnishes

Cooking meat as per the special dietary requirements.

Check the final products for quality, quantity, taste, freshness etc.,

Manage food cost, stock, wastage control, functions and events, meetings within the kitchen

Monitor kitchen cleanliness and supervise the cleaning/kitchen hand staff

Follow health and safety regulations.

Implement and monitor work health and safety practices.

The Chef must have good understanding of cost control, team development, food safety and OH & S Compliance.

Appropriate candidate must have the following skills, education and experience:

Education: Diploma or Advanced Diploma or Degree in Hospitality
Australian Experience: At least 3 + years of Australian Experience OR
Overseas Experience: At least 3+ years of Overseas Experience
Work Rights: Australian Citizen or Permanent Resident or Full Work Rights Holder
Expected salary: $79,000 ($76,000 - $85,000 per year)
