Tasmanian Wineworks is a new custom contract winemaking facility located in Launceston, and a dynamic new venture for acclaimed winemaker Jeremy Dineen. Committed to quality and excellence, it will deliver premium, flexible and collaborative winemaking services to producers of all sizes, from emerging brands to established producers – offering custom winemaking for boutique labels, through to efficient solutions for large scale fruit processing and dispatch.
Tasmanian Wineworks already has a committed premium client base ready for operations to begin in February 2026. Designed for staged growth, plans are in place to increase production from 800T to 3000T over the coming years.
Reporting to the Chief Winemaker/CEO, this is a senior role that will be responsible for managing the site, winery operations and the cellar team. The Winemaker will work closely with contract clients to provide proactive support and meet their requirements.
The inaugural Winemaker will be the key driver in establishing high-quality and efficient operations, contributing to innovations and continuous improvement.
This is an exciting role for an ambitious winemaker who will have the opportunity to grow alongside the business, with mentorship and professional development support from industry leaders.
Key Responsibilities
- Manage and oversee all aspects of wine production and the winery team, coordinating work programs and delivering wines to specification and schedule
- Develop and lead a high-performing team, providing training and guidance
- Maintain regular communication with contract winemaking and contract processing clients regarding processing specifications, harvest timing, logistics and progress updates
- Ensure quality control processes are followed and standards are met, protecting the integrity of all wines produced
- Implement and maintain SOPs for winery equipment and production processes
- Manage a secure work environment, ensuring Workplace Health and Safety, environmental, regulatory and policy compliance is adhered to and met
- Ensure accurate and timely updates of bulk wine system and records, from grape receival to laboratory records and bottling
- Manage winery operating costs and budgets
- Provide regular reports on client requirements, operations, progress updates and any issues
- Contribute to innovation and continuous improvement to drive quality and efficiency
- Assist with final stages of winery fit out and commissioning, and next stage of expansion plans, providing recommendations and support
- Develop and oversee a preventative maintenance program
- Provide hands‑on operational support, assisting with cellar duties, laboratory analysis and quality control processes as required
Key Requirements
- Tertiary qualification in Oenology or equivalent
- 5+ years’ relevant winemaking experience, with exposure to premium wine production, commercial and/or contract winemaking
- Wine sensory and quality assessment experience such as AWAC or show judging
- SWA experience an advantage
- Proficiency in winery software use and record keeping, experience using Vintrace an advantage
- Ability to lead a team and provide technical direction
- Strong technical skills and proficient in production processes and bottling
- Excellent communication skills and a high level of professionalism
- Practical and an ability to adapt to changing requirements
- Organised and developed planning skills
- Focus on quality and attention to detail
- Physically capable of performing operational duties
- Ability to work extended hours when required
- Valid forklift and driver’s licence
