You will enhance the restaurant’s menu by bringing your vision, attention to detail, and awareness of emerging gastronomic trends.You will be committed to passing on your know-how, developing your team’s skills, and fostering a culture of performance, respect, and shared enjoyment.Join us and let your talent shine in a place where every plate tells a story.Summary of ResponsibilitiesReporting to the Executive Chef, your essential duties and responsibilities include but are not limited to:Consistently provide professional, warm, and engaging serviceSupervise and train the kitchen teamDesign and develop restaurant menusEnsure consistency in dish preparation and compliance with hotel recipes and standardsMaintain and enhance the quality of food servedRespect seasonality and harmony of flavors in all dishesPresent dishes creatively and with finesseStay current with culinary trends and techniquesEnsure strong communication and coordination between kitchen and service teamsPropose strategies to grow food revenue and control food costCreate culinary events in collaboration with the F&B teamVisit tables and engage with guests to gather feedbackEnsure ongoing culinary development of the kitchen brigadePrepare work schedules for team membersConduct daily restaurant briefingsApply and enforce HACCP standards as per Accor/Fairmont guidelinesRecruit team members using the Smart Recruiter systemTrain team members according to the Train The Trainer (TTT) methodConduct performance evaluations after probation and annuallyLead by example and apply both technical and emotional LQA standardsCommunicate with outlet managers to assess guest satisfactionOversee cleanliness and maintenance of all work areas, tools, and equipmentAdhere to kitchen policies, procedures, and service standardsFollow all hygiene and safety policies when handling food and beveragesCommit to high service quality, discretion, and integrityMaintain a professional attitude, smile, and composure at all timesFollow ergonomic and safety standards as well as hygiene and health regulationsRespect all departmental and company policies, procedures, and service standardsPerform any other duties as assignedQualificaçõesQualifications:Minimum 3 years of prior supervisory experience in the culinary fieldMinimum 7 years of total culinary experienceStrong command of the Portuguese languageCulinary diploma (CFC or equivalent Experience)Experience in a 4-star or 5-star property renown restaurants is a strong assetStrong passion for the culinary artsCreative and innovative mindset, aware of contemporary culinary trends and able to craft bold, modern dishesHighly organized and methodical approach to workStrong leadership and team management skillsAbility to develop and grow the kitchen brigadeProficiency with Microsoft Windows applications is an assetExcellent interpersonal and problem-solving skillsHighly responsible and reliableAbility to work efficiently under pressure in a fast-paced environmentStrong team spirit and collaborative mindsetInformação adicionalOur Fairmont ValuesRespect:We value the needs, ideas, and individuality of others.
