Guests can sit in our bright, trattoria-style restaurant and feel transported to the Italian coast as they enjoy succulent lobster pasta, wood-grilled King George whiting, and Apollo Bay calamari, along with Totti's classics — antipasti, woodfired bread, handmade pastas and tiramisu.

The Role
This is the perfect opportunity for an upcoming Operations Manager to learn from a team of passionate hospitality professionals as well as be a part of one of Merivale's most iconic locations. We are looking for someone who is committed to immersing themselves in the team and venue, connecting authentically with the community.

In a nutshell, you will need to
* Understand how to deliver an exemplary guest experience. This incredible venue will feel warm and welcoming with a casual tone of engagement, underpinned by knowledgeable, professional execution.
* Lead & coach a diverse team of people. Ensuring that team culture is guest-focused, community-led, and sales-driven.
* Be competent in driving the financial results of the department. Be sales-focused, create and lead the team to execute revenue initiatives. Demonstrate proven results in managing financial controls.
* Have a passion for the product. Support the extraordinary team of chefs and ensure you and your team have detailed knowledge of the product.
* Establish a healthy working environment for the team – enjoyable, educational, results-focused, and respectful.
