**JOB SCOPE**
- A Commis Chef will be required to practice skills in assigned sections to the standards set by the Manager or supervisor. Assist and/or supervise assigned sections in absence of the supervisor or manager. Train and supervise staff at lower levels when required. Conduct their duties in a courteous, safe and efficient manner, in accordance with the hotel's policies and procedures, ensuring that a high level of service is maintained.

**KEY RESPONSIBILITIES**
- The ability to work closely with the kitchen brigade following instruction and direction
- Required to follow standard recipes and plate presentations in order to maintain quality standards of production and presentation
- Display an interest in all kitchen activities and helps colleagues whenever possible
- To complete HACCP / food safety training
- Actively demonstrate and comply with HACCP.
- Ensure safe manual handling procedures are followed
- Able to run the day to day operation of the section in the kitchen
- Assist in creating and preparing menus items and specials
- Taste and examine food prepared and make necessary adjustments and replenish food when necessary.
- Check and complete mise en place, par levels and set-up the station
- The ability to complete requisitions, obtain proper signatures and submit to the Purchasing department
- Communicate with the senior Chefs regarding menu items, problem situations or shortages
- Follow all guidelines for timely food service to guests
- Ensure preparation for the relevant section is completed to the standard of the Supervisor or Manager and in accordance with the Hotel's standards and recipe specifications
- Perform particular duties in various workstations/kitchens - for example grilling, frying, roasting and cold preparation in areas as directed
- Responsible for daily specials for relevant sections as requested
- Liaise with the supervisor or manager on ways to minimise waste
- Ensure relevant sections are maintained to the standards set by the City and State Health Department codes; Stewards Food Safety Manual; and the Hotel's standards with regards to preparation, storage sanitation and general hygiene.
- Show sense of urgency in delivery of service
- Knowledge and understanding of financial knowledge, controls, inventory, costs, expenses, and all cash handling procedures and policies.
- Perform all related duties as assigned according to business needs
- Advise the supervisor or manager of operational items needed as required
- Participate in on the job training with associates where required
- Attend all rostered shifts on time, including shift work and weekend work in accordance with rosters
- Immediately notify home department and human resources through Talent2 when contact phone numbers or personal details change
- Actively communicate any associate or guest feedback to your Manager, to seek continual improvements in service and ensure guest satisfaction
- Support the hotel, team members and shift leaders, maintaining a pleasant atmosphere with co-workers at all times
- Have a good understanding of both product and equipment used throughout the working day and have the ability to guide others on use and features.
- Use all equipment in a safe and practical manner, ensuring the safety of associates and guests
- Meet the grooming standards of the hotel as set out in the Associate Handbook
- Be well versed and knowledgeable of The Westin Melbourne's Fire and Evacuation procedures as well as health and safety requirements in the Workplace. Ensure aware of duty of care as determined by legislation and maintain complete familiarity.
- Anticipate guest's needs through observation and offer prompt, efficient service either personally or through effective communication with other associates
- Demonstrate clear behaviours that align to the Westin Service Culture Standards, the Marriott Journey and Brand Core values
- Comply with and abide by all hotel polices and procedure and information as outlined in Associate handbook
- Comply with Marriott's Worldwide Code of Business Conduct and Ethics and the Policy against Insider trading at all times.
- To work as and where directed by Management plus follow all reasonable requests

**EDUCATION AND EXPERIENCE**
- Please advertise on internal and external channels.
- experience of Minimum 2 years as a FT commis chef
- 5 star hotel experience will be a bonus.
- Should be able to work early morning shifts and general shifts.
- Passion to excel and innovate.
- Victorian food handlers' certificate.
- Undergone allergen training.
