Food Preparation: To plan and execute the menu. Itwill also include doing occasion special menus. Take responsibility for thecomplete menu. Manage the preparation of food and its presentation, ensuringthat it is in consultation with Food and Beverage manager and other Stakeholders. Stock Management: Ordering of supplies, rotation,doing labels with dates, storage and handling of perishable, non-perishable,frozen foods and cooking equipment. Maintain inventory books, take inventorycontrol measures, and ensure effective wastage practices. Training: To train all staff, in theirrespective jobs. Especially to the staff involved in cooking and food production,train them in procedures and methods relating to food preparation andpresentation. Kitchen Upkeep: To ensure all areas of the kitchen are clean, sanitized,well-maintained and presentable. Also, ensure that all the cooking equipment isin good working condition and ensure it timely repair and maintenance. Kitchen Administration: Maintain all the books related to staff attendance,work schedule, inventory and running expenses. Compliance: Ensure all the compliances related to Health, Safety and theEnvironment (HSE), Food Safety and HACCP, and Contract compliance are met. Large-Volume Cooking: Candidate with the knowledge to operate large-volumecooking equipment such as grills, deep-fat fryers, and barbeques, will be preferred.
Requirements
Position Requirements:
Australian recognised Certificate 4 Commercial Cookery qualification.
AQFAssociate Degree, Advanced Diploma or Diploma
Solid understanding of contract management, quality management systemsand continuous improvement principles.
Sound knowledge of Food Safety Standards, relevant legislation andstatutory obligations.
Enthusiasm and commitment to high standards of customer service.
Strong planning and organisation skills and proven experience incollaborative and consultative processes at a professional level.
Demonstrated interpersonal communication skills and the ability to workas a member of a team.
Excellent verbal and written communication skills.
