Assistant winemaker / cellar supervisor - moorilla

An opportunity presents for either an Assistant Winemaker or a Cellar Supervisor position. Due to the boutique nature of our business but having many different products our operations regularly include bottling and disgorging - all done onsite. Reporting to the Moorilla Winemaker and General Manager, this leadership position manages all day to day cellar and wine production operations including running the bottling and disgorging lines. This hand-on role will work closely with the Winemaker in all aspects of winemaking. Responsibilities also include working with Mona Maintenance to ensure all winery equipment is maintained in excellent working order. This role is also responsible for educating vintage staff in cellar processes as well as operating procedures to maintain health and safety requirements. The Gig:

- In conjunction with the Winemaker, manage fruit delivery and processing procedures;
- Oversee sparkling, white and red wine fermentation management and provide learning opportunities to Cellar Hand's when appropriate;
- Lead the cellar team in all cellar operations including additions, rackings, transfers and filtration and barrel management
- Lead the cellar team in all aspects and maintenance and seek to implement process improvements where possible;
- Responsible for preparing the wines for bottling, in conjunction with the Winemaker;
- Participate in wine tasting at all stages throughout the winemaking process and be involved in evaluation and recommendation of treatments in collaboration with the Winemaker;
- Perform bottling, tirage and disgorging procedures and provide rostering and supervision to casual staff;
- Regularly maintain winery equipment, resolve, or seek assistance, to remedy any faults and establish a regular maintenance schedule that ensures equipment remains safe and cared for;
- Supervise Cellar Hand's and perform any tasks required to maintain required standards of cellar cleanliness and presentation;
- Responsible for supervising, training, and mentoring all cellar employees, providing ongoing instruction and support as assigned;
- Remain vigilant to safety hazards and ensure all possible steps are taken to minimise risks to health and safety, both at a personal level and in respect of colleagues and contractors.

Job Requirements

The You:

- Experience with both the practical and technical aspects of the winemaking process and understand winemaking regulatory requirements;
- A team player, with excellent communication skills, a positive attitude and a strong work ethic;
- Strong organisational, problem solving skills, attention to detail, with ability to prioritise multiple tasks;
- A flexible approach to work with an understanding of the work requirements in vintage;
- Experience working with bottling and packaging lines;
- An understanding of workplace health and safety and a willingness to promote safe working practices where possible;
- Some experience in staff supervision is desirable;
- Enjoy working with and maintaining machinery and equipment;
- Hold a current Australian forklift and drivers licence.
