Dynamic Culinary Leadership Role
We are seeking a highly skilled Sous Chef to lead our culinary team and contribute to creating exceptional dining experiences at the Melbourne Cricket Ground.
As a Sous Chef, you will oversee daily culinary operations, ensuring high-volume food production meets quality standards for events and daily service. You will also support food safety plans and maintain HACCP accreditation standards, advocating for on-site compliance.
* Assist in managing departmental budgets and coordinating with suppliers to source high-quality ingredients
* Collaborate with the Head Chef and General Manager on menu development and resolving service-related issues
* Lead kitchen operations, including menu preparation and cooking according to standards
You will be responsible for fostering team development and motivation while maintaining consistent quality and service standards.
Requirements
To be successful in this role, you will need:
* A Diploma in Professional Cookery Level 5 or equivalent and Minimum Certificate III in Commercial Cookery
* Food Safety Supervisor Certificate desired
* Minimum of 3 years of monitoring food and labor cost, menu development, and costing
Proficiency in menu development and stock management is also essential. Competence in using business technology such as stock control systems, spreadsheets, and accounting systems is preferred.
