What you'll be doing
* Oversee the day‐to‐day operation of Pastore, Altus Rooftop Bar & Lounge, Breakfast, In‐Room Dining, and Minibar, ensuring each experience reflects the luxury standards of Hotel Chadstone Melbourne MGallery.
* Deliver refined and personalised guest experiences across all Food and Beverage touchpoints.
* Collaborate closely with the Kitchen, Sales & Marketing, Front Office, and Executive leadership teams to ensure seamless service delivery.
* Maintain exceptional presentation, service standards, and operational consistency across all outlets.
* Create a solutions‐focused culture that embraces flexibility, initiative, and finding the "yes" wherever possible.
* Drive team engagement through visible leadership, coaching, recognition, and a strong team culture.
* Lead, mentor, and develop Assistant Managers, Supervisors, and high‐potential team members to build capability and future leadership strength.
* Lead service recovery professionally and confidently to turn challenges into memorable guest outcomes.
* Support recruitment, rostering, labour management, productivity, and operational efficiency.
* Identify opportunities to elevate the guest experience, improve operational standards, and drive innovation across the department.
* Remain informed on luxury hospitality, food, beverage, and service trends to ensure the hotel offering remains contemporary and competitive.
* Maintain a strong operational presence during key service periods, evenings, weekends, and peak trading times.
What we're looking for
* Previous leadership experience managing premium, multi‐outlet Food and Beverage operations, preferably within a luxury hotel environment.
* A genuine passion for luxury hospitality, exceptional dining experiences, and guest connection.
* Strong leadership capability with proven experience developing and inspiring high‐performing teams.
* Experience coaching and developing Assistant Managers, Supervisors, and emerging talent.
* A calm and confident leadership style with exceptional communication and relationship‐building skills.
* Strong operational knowledge across restaurant, bar, and hotel dining environments.
* Excellent organisational skills with the ability to manage multiple outlets and priorities simultaneously.
* A proactive mindset with a focus on continuous improvement, innovation, and service excellence.
* Flexibility to align your schedule with business demands, including evenings, weekends, and public holidays.
* A visible and hands‐on leadership approach that inspires confidence and accountability across the team.
