Ace Hotel Sydney is our first-ever spot in Australia, set in the verve of Surry Hills. Inspired by the neighbourhood's vibrant rhythm, Ace Sydney is home to a bustling public Lobby alive nearly nightly with DJs and performers, a rebellious art program and sunken lounge just off the Lobby bar. We've also got three distinct restaurants led by award-winning culinary pros, including celebrated Copenhagen-based Australian chef, Beau Clugston's Kiln; our oasis for fresh, seasonal fare called LOAM; and a day-to-night laneway café, Good Chemistry. About Kiln


Recently reopened with a fresh new menu, Beau Clugston takes to reinvent the iconic location upon the 18th floor of one of Sydney's renowned hotels. Kiln offers a truly elevated dining experience that stands out in the city's vibrant culinary scene. With open terraces, stunning views, an open kitchen featuring a woodfire hearth, and spaces such as a bar, lounge, and private dining area, where DJ beats amplify the vibrant atmosphere.

Our dishes capture the essence of the open flame, smoke, and smoulder from the wood-burning grill. Designed for sharing, the menu evolves with the seasons, featuring sustainably sourced ingredients. Seating up to 120 guests, offering both restaurant and bar areas, Kiln provides the ideal setting to relax and soak in the atmosphere even after dining.

About you


The ideal candidate will bring creativity, passion, and a true love for food, backed by proven experience.

* Australian work rights are required for this position.
* Must have experience as a Head Chef or similar leadership role within a high-end or award-winning restaurant.
* Previous wood fire cooking experience is advantageous.
* Exceptional culinary skills, with a strong understanding of food preparation techniques and presentation.
* A passion for using local and seasonal ingredients, with a creative approach to menu development.
* Strong leadership and team management abilities, with excellent communication skills.
* Experience in managing food costs, inventory, and kitchen operations.
* Have strong communication skills, with a commitment to punctuality and reliability.


About the role


This role will be the champion of crafting unforgettable culinary experiences with originality & flair as they lead a skilled team of creative individuals.

* Working full-time on a 5-day rotating roster consisting of lunch, dinner & weekend shifts.
* Oversee all kitchen operations, including food preparation, cooking, and presentation, ensuring the highest standards of food quality.
* Manage and mentor kitchen staff, through training and guidance to enhance their skills and development.
* Reporting to the Culinary Director and collaborating with the Partner Chef to create a cohesive dining experience that aligns with Ace brand values.
* Monitor inventory, manage food costs, and ensure the kitchen operates within the provided budget.
* Champion the recruitment and rostering needs, ensuring ample coverage and optimal guest experience.
* Write and communicate rosters in accordance with budget guidelines, ensuring compliance with Fair Work & the appropriate Award.
* Maintain a clean and organised kitchen, adhering to health and safety regulations.
* Support the development of a positive work environment by proactively promoting an inclusive and welcoming culture.
