Bar Manager - Immersive Theatrical Experience
Alcotraz/Moonshine Saloon has opened its doors in the Gold Coast and we're looking for a Bar Manager to join our team.
This is a hybrid role where previous people management experience is essential, along with a love of cocktails and experience in making them. Working side by side with the Venue Manager, you will form the operational leadership team to deliver one of Queensland's most unique cocktail experiences.
Compensation
Hours: 30-38 hours per week (Permanent contract)
Pay: $65k, paid monthly
Bonus: Eligible for performance-based bonus tied to bar operations and cost management up to 10%
Schedule: Tuesday to Saturday, with majority of hours across Friday and Saturday
Start Date: Early June 2026
Roles and Responsibilities
* Lead and manage the bar team, including hiring, rostering, training, and performance management of bartenders.
* Oversee all bar stock management, including ordering, inventory control, and supplier negotiations to optimise costs.
* Ensure high‐quality cocktail preparation and service, executing 50+ drinks per hour during peak service periods.
* Maintain and monitor Cost of Goods Sold (COGS) targets, working with the Venue Manager to drive cost efficiency.
* Ensure compliance with Queensland liquor licensing conditions and RSA requirements at all times.
* Maintain bar cleanliness, organisation, and equipment in excellent working condition.
* Design and develop new cocktail recipes in collaboration with the creative team, ensuring drinks align with the immersive experience.
* Coordinate staff requirements with the Venue Manager and Performance Manager based on guest numbers.
* Support the Venue Manager with operational duties as needed, including assisting in any area of the venue when required.
* Act as Duty Bar Manager during shows, ensuring seamless bar operations throughout each experience.
Qualifications
* Current Queensland RSA (Responsible Service of Alcohol) licence.
* Right to work in Australia.
* Proven experience in a bar management or supervisory role.
* Strong knowledge of classic cocktails, mixology techniques, and ability to execute high volumes during peak service.
* Demonstrated experience in staff rostering, training, and inventory management.
* Must be available to work evenings and Saturdays.
* You love designing new, exciting drinks and take pride in the craft of mixology.
* You're great at leading a team and enjoy collaborating with a multidisciplinary creative team, including actors and venue staff.
* You understand the importance of cost control and take ownership of bar profitability.
* You maintain high standards of cleanliness, organisation, and drink quality.
