Trader House is a collective of restaurants, bars, and specialty retail stores by Melbourne-based chef, cookbook author and columnist Andrew McConnell and photographer Jo McGann. Operating in Melbourne are Gimlet, Apollo Inn, Cutler, Supernormal, Cumulus Inc., Marion, Builders Arms Hotel, Meatsmith Heritage Butcher and Morning Market. In 2024, Trader House opened Supernormal and Bar Miette in Brisbane. A new restaurant, Côte Basque, will open in Melbourne in the winter of 2026.
We are seeking passionate chefs and leaders for rewarding senior management roles in our kitchens. These positions help drive our culinary programs and businesses forward, guide the training and development of our chefs and uphold an exceptional guest experience. We're looking to strengthen our leadership group as we prepare for a big year ahead.
Impressive candidates will have previous experience managing kitchens, and be seeking an opportunity to lead in a creative, compassionate and decisive manner. Central to these positions is steadfast leadership – through a strategic long-term approach to recruitment, training and development – as well as the ability to design appealing menus and dishes.
