We're searching for a Baker to join our Production Team, as we continue to host an incredible community of people brought together by a love of hand-crafted artisanal bread.
The ideal candidates will be passionate about the art of sourdough bread and have a deep desire to be part of a skilled, efficient and creative team who are at the top of their game. We take pride in using intentional ingredients, crafting artisanal products and providing exceptional service.
The Baker's Duck is an artisan sourdough bakery located in the beautiful garden city of Toowoomba, Queensland. We are a well-established organisation, known for investing time and love into crafting food that is made to be savoured.
Bakers that are experienced in baking bread (experience in natural, sourdough bread is a highly desired attribute).
The Team
We are a team of passionate and dedicated bread bakers ranging from just starting out to years in the game. Our Production Team places importance on sharing knowledge and skills, highlighting our strengths and strengthening the gaps in each other's abilities.

Schedule
The production team work on a 7-day roster and subject to change with appropriate notice. We attempt to keep rostered days off together.
Attributes Required
* AQF Certificate III including at least two years of on-the-job training, or AQF Certificate IV (ANZSCO Skill Level 3)
* Passion for bread baking craft
* Basic literacy and numeracy skills
* Ability to work around hazardous machines
* Ability to follow written procedures to a high degree
* Reliable and committed to your role, punctual, well-presented showing initiative and high motivation
* Clear understanding of proper and safe operation of bakery equipment and utensils, HACCP and WHS
* Able to work under pressure
* Work well with others, share knowledge and communicate effectively.
Desired Skills
* Sourdough production – mixing and developing doughs with natural pre ferments and hand moulding techniques
* Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
* Checking the quality of raw materials and weighing ingredients
* Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
* Preparing pastry fillings
* Monitoring oven temperatures and product appearance to determine baking times
* Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
* Glazing buns and pastries, and decorating cakes with cream and icing
* Operating machines which roll and mould dough and cut biscuits
* Emptying, cleaning and greasing baking trays, tins and other cooking equipment.
The Rewards
Remuneration will be negotiated with the successful applicants based on their experience and we will be flexible with the start date, if needed.
