Overview

Wallsend Manor Aged Care are currently seeking a Head Chef to join our team on a full-time basis.

We are located approximately 14 kilometres north west of the Port of Newcastle and offer a serene country like setting with views across the rolling hills. We provide residents a mix of low care, high care, dementia services with ageing in place while providing quality care, community and an engaging lifestyle for our residents to enjoy.

About the role

The Head Chef is responsible for the provision of restaurant style, food service that meets the nutritional needs of residents of our facility. This position will effectively manage the kitchen to ensure that the food produced complies with current food safety and HACCP principles, as per the set menu, nutritionally balanced and of the highest quality whilst remaining within the approved budget.

Key Responsibilities

- Ensure food costs are within budget allocation, through good management of cost per meal, yields, reduction of over catering and waste management.
- Catering staffing is in line with the agreed budget to ensure an effective food service delivery to residents.
- Seasonal menus are in place and meet the preferences and nutritional requirements for residents.
- Ensure that all resident’s dietary/specialised nutritional requirements and known food allergens/tolerances are met.
- Order and manage food produce and catering items to ensure menus can delivered to residents as advertised internally in advance and that all items are ordered in sufficient quantities to fulfil resident catering requirements while minimising wastage of food supplies.
- Oversee the receipt of all food produce ensuring it is correctly received, inspected, temperature checked, storage, dated and rotated.

About you

The successful applicant will have the following skills and experience:

- Certificate III in Commercial Cookery (required)
- Demonstrated experience and proven skills in a similar role in the aged care sector or broader hospitality industry (required)
- Food Safety Supervisor Certificate.
- Sound knowledge and experience with HACCP and Food Safety implementation
- Sound working knowledge of food texture modification and dietary requirements.
- Ability to manage a small-scale commercial kitchen focusing on high quality food product, in accordance with legislative and regulatory requirements.
- A commitment to the principles of Workplace Health & Safety and ensuring a safe environment for residents and staff.
