Chef role in a busy seaside venue, leading a team of 6-10. Leading and developing the team is a key part of the role, along with strong culinary skills.

Hotel, Phillip Island is a premier venue of Phillip Island offering a bistro, alfresco dining areas & cocktail bar.

Phillip Island has much to offer for lifestyle, its people and the opportunities presented with a large number of national and international events, a track racing circuit, penguin tours, wineries & surfing competitions. We are seeking a qualified experienced sous chef who wishes to move here for a term or permanent basis. We want to hear from people who have the drive and passion for not only food, but hospitality and team development.

Duties will include but are not limited to:

* Cooking quality food in our 250 seat venue

* Responsibility for receipt and examination of goods/supplies to ensure quality and quantity standards and specifications are met

* Liaise with kitchen staff, and assist where necessary to ensure efficient expedition from kitchen to dining area

* Control and order stock and maintain stock levels; maintain basic food cost control standards. Liaise with the Head Chef regarding shortages/usages

* Collaborate with Owner to plan and develop recipes and menus, considering factors such as seasonal availability of ingredients, the likely number of customers, portion size and final menu price

* Execute menu items from start to finish. This including but not limited to preparation of ingredients, butchery of proteins, cooking and plating of menu items

* Ensure proper food handling procedures are followed for wrapping, labelling, dating, stocking, storing, rotating and checking temperature of products

* Creating new and exciting specials with an emphasis on fresh seafood

The successful applicant will:

* Have pride and love for their work

* Be organised, energetic, punctual and efficient & clean

* Have great communication skills with the head chef – Open & honest

* Be able to deal with and resolve conflict that may arise with both customers and staff

* A strong background in modern style pub / restaurant food

Job Type: Full-time

Pay: $70,000.00 – $80,000.00 per year

Work Location: In person
