Culinary Operations Manager
We are seeking a skilled Culinary Operations Manager to join our team at Four Seasons Hotel Sydney.
As a Culinary Operations Manager, you will play a vital role in delivering exceptional culinary experiences for various events and functions.
* Prepare, cook, and present banquet dishes to the highest standards across a range of events
* Ensure all mise en place is ready ahead of service and manage your section efficiently during events
* Uphold consistency in presentation, portion control, and quality across all banquet operations
* Work closely with the Banquet Sous Chef and kitchen leadership team to execute event menus
* Assist in mentoring and guiding junior team members to support their growth and performance
* Maintain a clean and hygienic work environment in compliance with food safety standards
* Support the control of food costs and wastage through efficient practices and portioning
Key Qualifications:
* Previous experience as a Chef de Partie or strong Demi Chef within a high-volume or banquet setting
* Strong knowledge of culinary techniques, food safety practices, and event service timing
* A passion for preparing beautiful food with consistency and care
* Excellent communication and collaboration skills in a team environment
* Flexibility to work across a rotating roster, including early mornings, late nights, weekends, and public holidays
