Pastries Director
 * About the Role: We are seeking an exceptional Pastry Lead to join our team as a Pastries Director. The successful candidate will be responsible for overseeing daily pastry section operations, including workflow planning, production schedules and quality control.
 * Key Responsibilities:
 o Prepare, bake and finish a wide range of pastries, cakes, breads, desserts and plated sweets.
 o Design and develop innovative dessert concepts, seasonal specials and signature items for menus in collaboration with the chef team.
 o Create desserts and cakes for functions, weddings and special events tailored to client requirements.
 o Develop new gelato and sorbet flavours in collaboration with the Chefs, focusing on seasonal and locally sourced produce.
 o Oversee daily pastry section operations including workflow planning, production schedules and quality control.
 o Monitor stock levels, order ingredients and supplies and ensure cost efficiency with minimal wastage.
 o Maintain strict adherence to food safety, hygiene and workplace health & safety standards.
 o Ensure consistency in product presentation, portioning and quality across all service periods.
 o Collaborate with the Head Chef and wider kitchen team to align pastry offerings with the overall menu.
 o Maintain cleanliness, organisation and efficiency in the pastry kitchen at all times.
