Key Responsibilities
As our Pastry Chef (Viennoiserie), you will be responsible for the preparation and production of laminated pastries, enriched doughs and small cakes in a wholesale environment, ensuring consistency, quality and presentation at all times.
* Preparing, mixing, laminating, proofing, baking and finishing a range of Viennoiserie products including croissants, pain au chocolat, danishes and brioche to specified recipes, standards and production schedules
* Producing high-volume pastry items while maintaining artisan techniques, consistency and product integrity across all batches
* Monitoring and controlling key production variables including dough temperature, lamination quality, proofing conditions and bake profiles to achieve consistent results
* Hand shaping, cutting and finishing pastries with a high level of attention to detail, presentation and portion control
* Operating and maintaining specialised pastry equipment including laminators, dough sheeters, mixers, rack ovens and blast freezers
* Ensuring daily pastry production targets are met in line with volume requirements, quality standards and delivery schedules
* Maintaining strict food safety, hygiene and HACCP compliance throughout all stages of production
* Communicating effectively with Head of Pastry and pastry team regarding production requirements, workflow and scheduling
* Assisting with product development and continuous improvement initiatives
* Demonstrating flexibility, adaptability and a positive approach to change
Essential Skills and Experience
* Certificate III in Patisserie (or higher)
* Minimum 1 year full-time relevant experience in a commercial or wholesale pastry or bakery environment
* Proven experience producing Viennoiserie products to a high standard in a production setting
* Strong understanding of lamination techniques, dough handling and fermentation processes
* Experience working in a HACCP-based food production environment
* Strong knowledge of food safety and workplace health and safety requirements
* Ability to work efficiently in a fast-paced, high-volume environment
* Ability to work both independently and as part of a team
* Strong communication skills and a reliable, professional work ethic
