About the role
Head Chef wanted for the new Hideki Restaurant You will be responsible for leading and overseeing the culinary operations of our prestigious new restaurant in the heart of Brisbane. Hideki aims to be an award-winning and trendy Japanese venue among local food enthusiasts. This is a full-time role based in our Brisbane James Street location. You will be instrumental in crafting exceptional dining experiences, driving menu innovation, and fostering a passionate culinary team.
What you'll be doing
* Develop and implement creative, seasonal menus showcasing local produce and innovative techniques
* Oversee all kitchen operations, including food prep, plating, and presentation
* Manage, train, and motivate a team of chefs and kitchen staff to ensure high standards
* Collaborate with management to ensure excellent customer service and seamless dining
* Monitor inventory, food costs, and budgets to optimize profitability
* Stay updated on industry trends and adopt new culinary methods and technologies
* Ensure compliance with food safety and health regulations
What we're looking for
* Minimum 2 years experience as a Head Chef or similar senior culinary role
* Experience in Japanese cuisine, especially sushi and kaiseki
* Proven leadership and team development skills
* Exceptional culinary skills with a passion for fresh, local ingredients
* Strong problem-solving, decision-making, and attention to detail
* Business acumen and financial management skills
* Excellent communication and stakeholder collaboration abilities
* Relevant culinary or hospitality qualifications
* Experience implementing HACCP food safety systems
