About The Position
The Retail Butcher role at Hong Meat Sydney is a hands-on, customer-focused position within a busy retail butchery serving both local Australian customers and a highly multicultural community in Eastwood. The role involves preparing a wide range of fresh meat products for retail sale, including standard Australian cuts as well as customised, culturally specific preparations such as Chinese hot pot slicing and marinated Korean-style BBQ meats.
The position requires strong retail butchery skills, the ability to operate commercial butchery equipment independently, and a high level of attention to food safety, hygiene, and quality standards. As this is a fast-paced retail environment, the successful candidate must be able to manage meat preparation and customer service simultaneously while responding accurately to individual customer requests.
This role is essential to the daily operation of the business and to maintaining consistent service quality for a diverse customer base.

Tasks and Responsibilities
· Preparing meat products for retail sale by deboning, trimming excess fat, and cutting, mincing, grinding, or thin-slicing meat to precise specifications for shop display or customer orders, including standard Australian retail cuts, marinated BBQ products, and specialised Chinese hot pot slicing and Korean-style BBQ preparations, in accordance with Australian retail butchery standards.
· Producing value-added meat products such as crumbed cuts, marinated items, seasoned meats, and culturally specific preparations tailored to customer preferences, including Chinese-style cuts for hot pot and stir-fry dishes, as well as marinated Australian and Korean-style BBQ meats.
· Selecting and preparing meat for the production of smallgoods, including sausages, marinated and seasoned meat products (such as marinated beef or pork for BBQ and stir-fry use), cured or seasoned pork products, and prepared minced meat products, while ensuring consistent quality and full compliance with Australian food safety and hygiene requirements.
· Operating commercial retail butchery equipment independently, including meat saws, skinning machines, mincers, mixers, slicers, tenderisers, shredders, and specialised hot pot meat slicing machines, in line with workplace health and safety procedures.
· Preparing marinades, seasonings, curing mixtures, and pickling solutions by accurately measuring and blending spices, salts, and other ingredients to meet product specifications and customer expectations.
· Operating sausage filling machines, smoking chambers, and cooking vats to produce fresh and processed meat products for retail sale.
· Advising customers on suitable cuts of meat, portion sizes, and preparation methods, including recommendations for hot pot, BBQ, roasting, and stir-fry cooking styles, while providing clear and accurate customer service in a multicultural retail environment.
· Assisting with daily production planning, workload scheduling, and estimating quantities required to meet customer demand during peak trading periods, ensuring efficient operation of a fast-paced retail butcher shop.
Qualifications, education, experience, and abilities required:
Qualifications/Education
· A relevant Certificate IV qualification in retail butchery or a related field.
· In the absence of formal qualifications, a minimum of three years of relevant industry experience may be accepted as a substitute.
Experience/ Knowledge
· At least one year of relevant retail butchery experience in a fast-paced, multicultural customer environment, with the ability to meet diverse customer requirements for meat preparation and cutting styles, including Chinese, Malaysian, Korean, and standard Australian practices.
· Where no formal qualification is held, applicants must demonstrate a minimum of four years of relevant retail butchery experience.
Essential Skills and Requirements:
· Proven experience in a retail butchery environment (non-factory based), including carcass and primal cutting, customised customer orders, and daily preparation of fresh meat for retail sale.
· Demonstrated ability to prepare both standard Australian retail cuts (such as steaks, roasts, and BBQ cuts) and culturally specific meat preparations, including Chinese hot pot slicing, thin-cut meat preparation, and Korean-style marinated meats.
· Strong customer service and communication skills, with effective English proficiency to serve local customers; preferable with additional language capability in Mandarin, Cantonese, Hokkien, and Malay is highly beneficial for accurately handling customised orders in a multicultural retail environment.
· Proven experience independently operating commercial butchery equipment, including meat saws, mincers, mixers, slicers, shredders, tenderisers, and specialised hot pot meat slicing machines, in accordance with workplace health and safety requirements.
· Sound knowledge of food safety, hygiene practices, temperature control, and retail compliance requirements applicable to commercial butcheries in Australia.
· Ability to work efficiently in a fast-paced retail environment, managing multiple tasks simultaneously with minimal supervision while maintaining accuracy, safety, and product quality.
Salary
Below is the annual base salary to be paid, plus superannuation contributions made at the level prescribed by the Superannuation Guarantee laws, or any laws that replace them. Annual base salary is AUD $81,016 plus superannuation.
