Job Description
We are seeking a visionary and innovative Executive Chef to lead our culinary operations at the Novotel Newcastle Beach. In this full-time hands on role, you will be responsible for overseeing all culinary operations, in the 50 seat restaurant with bar & 4 conference & events spaces.
Oversee all aspects of kitchen operations, including food preparation, quality control, and inventory management
Leading culinary innovation and delivering consistently exceptional food
Mentor and inspire your kitchen team, fostering a culture of creativity and continuous improvement
Collaborate with the management team to ensure seamless front-of-house and back-of-house operations
Manage kitchen financials, including food cost control, labor planning, and budget management
Ensure compliance with food safety regulations and maintain the highest standards of hygiene and cleanliness
Partner with local suppliers to source high-quality, sustainable ingredients
Stay current with culinary trends and innovate to keep our restaurant at the forefront of the Newcastle dining scene
Contribute to marketing initiatives and represent the restaurant in media appearances and community events
Qualifications
Previous experience in a similar role, preferably within a hotel industry
Culinary degree or equivalent professional certification
Food Safety Supervisor certificate
Strong knowledge of food hygiene, HACCP management, and compliance with local health and safety regulations
Flexibly to work across a range of shifts including weekends and public holidays as required
Strong culinary skills and a passion for creating exceptional dishes
Strong financial acumen, including experience with budgeting and cost control
Excellent communication and interpersonal skills
Strong problem-solving skills and decision-making abilities
Passion for culinary excellence and attention to detail
Flexibility and willingness to adapt to changing needs and trends
