About the Role
Sous Chef sought to lead airline catering production client.
Candidate will bring passion for food, strong leadership and proven track record in high-volume environments.
Key Responsibilities
- Support Executive Chef in day-to-day operations of culinary production for airline meals (domestic and international flights)
- Lead kitchen staff, ensuring efficient workflow and team performance
- Oversee food preparation, cooking and presentation according to airline specifications and SOPs
- Ensure compliance with hygiene, HACCP and food safety regulations
- Manage production schedules to meet tight deadlines and flight dispatch times
- Collaborate with menu planning, recipe development and seasonal updates in alignment with airline partners
- Monitor food and labor costs, minimizing waste and maximizing productivity
- Conduct regular training and performance evaluations for kitchen team members
- Liaise with procurement and logistics teams to ensure timely supply of ingredients and kitchen resources
- Maintain detailed documentation for quality audits and airline client inspections.
Requirements
- 7–10 years of progressive experience in culinary roles, with at least 2–3 years in a supervisory or sous chef position
- Prior experience in airline catering, institutional cooking or large-scale food production preferred
- Culinary degree or relevant professional training
- Strong knowledge of international cuisines and dietary requirements (e.g. vegetarian, halal, gluten-free)
- Excellent organizational and leadership skills
- Familiarity with airline catering software, production systems or ERP tools is a plus
- Flexibility to work shifts, weekends and holidays as per flight schedules
- Strong understanding of food safety standards including HACCP, ISO or similar certifications.
