The Venues
The Bistro
Our flagship bistro blends classic southern French technique with the best regional produce. Wine plays a central role in the guest experience, with a carefully curated list designed to complement seasonality, cuisine, and sense of place. Sommeliers here will work closely with chefs and senior leadership to deliver polished, thoughtful wine service in a beautiful, fastidious dining room.
Feu
In the shadows of The Belongil emerges Feu—a world-class theatre of flame, emotion, and sensation. Aiming to be one of Australia's finest restaurants, Feu will deliver a multi-course tasting experience driven by fire and Northern Rivers produce. The wine program will be ambitious, expressive, and precise, requiring sommeliers who thrive in storytelling, technical excellence, and elevated guest engagement.
The Members Bar
Our intimate members bar (name to be revealed) will feature a refined beverage offering where wine, cocktails, and rare spirits intersect. Sommeliers in this space will contribute to a sophisticated, creative environment and collaborate closely with bar and kitchen teams to deliver tailored, memorable experiences.
The Opportunity
We are seeking three Sommeliers for full-time roles, with an immediate start available.
These roles are suited to professionals with proven experience in fine dining or premium hospitality environments, who understand the detail, rhythm, and discretion required at the highest level of service.
You will be responsible for delivering exceptional wine service, guiding guests through curated lists, supporting cellar management, and contributing to the ongoing development of each venue's wine program.
