Regular work week is Wednesday to Sunday with weekends and nights expected
Manky Sally's, Moo Brew's taphouse in Salamanca, has been open for 24 months and is establishing itself as one of Hobart's quirkiest, and most welcoming venues. Our vision is to build on this reputation even further, proving that craft beer bars and restaurants can also be a soft and beautiful place to land, and sling world class food as well as Moo Brew beers!
The Venue Manager will oversee all operations within the venue, working closely with our Head Chef to develop menu designs, manage timesheets and staffing budgets, and handle inventory management. The successful candidate will be responsible for recruiting, training, and managing staff. The Venue Manager is expected to help ensure fast, efficient, and friendly service to customers, follow all venue policies and procedures, and lead by example. Reporting directly to the General Manager, the Venue Manager will be a key senior member of both our beautiful Salamanca venue, and the wider Moo Brew team, as a true ambassador for our brand in a tourist traffic hot spot. Manky Sally's trades 7 days a week during our peak season (approximately November – March) and 5 days a week during the quieter months (approximately April – October).
The Gig:
* Oversee staff's continuing education on Moo Brew's products and brand story.
* Collaborate with the Head Chef to design menus, and bar staff to create specialty drinks.
* Manage all bookings, events and private functions.
* Recruit, train, and manage bar staff and supervisors—including inductions, ongoing development, and ensuring adherence to venue policies and safety protocols across all trading days
* Manage staff rosters, timesheets, and staffing budgets, ensuring compliance with RSA and WH&S policies.
* Manage bar activations and inventory logistics, including stocktakes, wastage, spoilage, and communicating menu changes and product information to staff.
* Oversee all venue operations including bar readiness, cleaning, pack-down, green room waste disposal, furniture set-up/removal, and arming the building.
* Manage all venue maintenance needs if/when they arise with the appropriate contractors, and maintain adherence to liquor licensing laws.
* Ensure seamless patron experience by working with other staff and stakeholders.
* Report to Moo Brew's General Manager on various aspects such as inventory, staff performance, patron safety, security matters, and incidents, including managing emergency safety procedures.

The You:
* Experience in running a comparable venue.
* A proactive mindset—you naturally look for gaps, improvements, and opportunities rather than waiting to be asked.
* Experience and comfort in all areas of staff and team management, including confidence in delivering and receiving feedback and managing conflict.
* Able to foster a positive working environment and a welcoming atmosphere for patrons.
* Passionate about craft beer and/or a willingness to understand our brewery-to-glass processes.
* Sound knowledge of beverages and cocktail creation and delivery.
* Good knowledge of food and hygiene standards and regulations.
* Efficient knowledge in stock management and relevant processes.
* Friendly and approachable, and able to negotiate and work with a diverse range of stakeholders, both internal and external.
* Knowledge of RSA procedures and licensing requirements—RSA certification is essential.
* Ability to work nights and weekends, with flexibility to adapt to seasonal trading patterns including 7-day peak periods.
