Position Summary

We are seeking a qualified Cook to join our kitchen team. The Cook is responsible for preparing and cooking Japanese-style dishes in accordance with recipes, quality, and presentation standards, while maintaining a clean and safe kitchen environment. This role requires attention to detail, teamwork, and the ability to work efficiently in a fast-paced setting.

The Tasks for the position include:

· Prepare and cook a variety of Japanese dishes, including sushi, sashimi, tempura, donburi, and other menu items.

· Ensure consistency in taste, portion, and presentation according to restaurant standards.

· Follow set recipes and assist in developing new menu items under the direction of the chef/management.

· Assist with ordering, receiving, and storing food supplies and ingredients.

· Maintain stock rotation and monitor inventory to reduce wastage.

· Use and clean kitchen equipment properly, reporting maintenance needs when required.

· Maintain kitchen cleanliness and ensure compliance with food safety, hygiene, and health regulations.

· Prepare mise en place and organise workstations for effective service.

· Support and coordinate with kitchen assistants and other cooks to ensure smooth kitchen operations.

· Assist with training junior staff or kitchen hands as required.

· Communicate with front-of-house staff to ensure timely and accurate service.

· Monitor food preparation times to meet service demands and customer expectations.

· Comply with workplace health and safety practices and contribute to a safe working environment.

Skills & Qualifications:

· Certificate III or IV in Commercial Cookery (or equivalent qualification).

· Minimum of 1 year experience as a Cook in a commercial kitchen, preferably with Japanese cuisine.

· Sound knowledge of food hygiene and safety regulations.

· Ability to work under pressure and handle high service volumes.

· Strong organisational and time management skills.

· Team-oriented with good communication skills.
