Job Description
We are seeking a visionary and innovative Executive Chef to lead our culinary operations at the Novotel Newcastle Beach. In this full-time hands-on role, you will be responsible for overseeing all culinary operations in the 50-seat restaurant with bar & 4 conference & events spaces.
Responsibilities
* Oversee all aspects of kitchen operations, including food preparation, quality control, and inventory management
* Lead culinary innovation and deliver consistently exceptional food
* Mentor and inspire your kitchen team, fostering a culture of creativity and continuous improvement
* Collaborate with the management team to ensure seamless front-of-house and back-of-house operations
* Manage kitchen financials, including food cost control, labor planning, and budget management
* Ensure compliance with food safety regulations and maintain the highest standards of hygiene and cleanliness
* Partner with local suppliers to source high-quality, sustainable ingredients
* Stay current with culinary trends and innovate to keep our restaurant at the forefront of the Newcastle dining scene
* Contribute to marketing initiatives and represent the restaurant in media appearances and community events
Qualifications
* Previous experience in a similar role, preferably within a hotel industry
* Culinary degree or equivalent professional certification
* Food Safety Supervisor certificate
* Strong knowledge of food hygiene, HACCP management, and compliance with local health and safety regulations
* Flexibly to work across a range of shifts including weekends and public holidays as required
* Strong culinary skills and a passion for creating exceptional dishes
* Strong financial acumen, including experience with budgeting and cost control
* Excellent communication and interpersonal skills
* Strong problem-solving skills and decision-making abilities
* Passion for culinary excellence and attention to detail
* Flexibility and willingness to adapt to changing needs and trends
