About the Role
On behalf of our client, we are seeking a skilled Mechanical Engineering Technician to join their dedicated engineering team. Our client operates a high-volume, quality-focused bakery where traditional methods meet modern machinery – from dough handling systems, proofers, deck ovens, and conveyors to packaging lines. In this role, you will work directly under Mechanical Engineers to ensure all bakery-specific equipment runs safely, efficiently, and in full compliance with food-grade mechanical regulations. You will bridge the gap between design and floor-level maintenance, helping to minimise downtime in a fast-paced, artisan production environment.
Key Duties
Design & Documentation Support
• Prepare detailed drawings, layout plans, and technical schematics for modifications to bakery machinery (e.g., mixers, dividers, ovens) under the direction of Mechanical Engineers.
• Assist engineers and technologists with the mechanical design of new baking line components, including dough conveyors and hydraulic dough press equipment.
Installation & Assembly
• Assemble, install, and commission new or retrofitted mechanical assemblies specifically for bakery production – including variable-speed drives, safety guards, temperature controls, and pneumatic or hydraulic power systems.
• Select appropriate hand tools, rigging equipment, and precision measuring instruments required for each installation or repair task.
Costing & Resource Planning
• Estimate material quantities, fastener specifications, and machine requirements for bakery line upgrades or emergency repairs, ensuring minimal ingredient or product waste.
• Calculate project material costs and labour hours, providing reports to senior engineers to support budget planning for scheduled overhauls or expansions.
Testing & Data Analysis
•Perform and directly supervise field tests (e.g., vibration analysis, thermal profiling on ovens, pressure tests on hydraulic lifts) as well as in-house laboratory tests of mechanical lubricants and wear components.
•Collect operational data from PLC panels and mechanical sensors, carry out complex load and tolerance computations, and prepare diagnostic diagrams for corrective action.
Maintenance & Compliance
• Organise and oversee scheduled inspection, preventive maintenance, and breakdown repairs of all bakery plant machinery, including spiral mixers, reversible sheeters, and automated tray washers.
• Ensure all mechanical work and system modifications stay within Australian standards, food-safety machinery regulations, and the company's internal contract provisions, with completed work signed off against original specifications.
Requirements
* Formal qualification in Mechanical Engineering Technology (or at least 2 years of relevant experience substituting for the qualification).
* In addition to formal quals, proven on-the-job experience with bakery or food-processing machinery is highly preferred.
* Ability to read and revise mechanical schematics, and to use diagnostic software for common bakery automation systems.
