HMS Management Pty Ltd – Sous chef – Surfers Paradise, QLD – Full Time – $75,000 - $85,000 per year.
Clock Hotel, operated under the Maloney Hotel Group, stands as a beacon of entertainment and hospitality in the heart of Surfers Paradise.
Clock Hotel has three bars across three levels and is a destination for locals and visitors alike.
Responsibilities
Oversee kitchen operations and manage rostering and scheduling of kitchen staff, including kitchen hands.
Work closely with the executive chef to implement new ideas, menus, specials, latest food trends and systems.
Ensure quality and control in all food preparation.
Supervise ordering, purchasing and receipt of scheduled supplies.
Maintain compliance with OHS guidelines.
Train, demonstrate and lead new kitchen recruits.
Ensure HACCP policies and procedures are adhered to by all kitchen staff.
Report shifts to management in the absence of the Executive Chef.
Conduct risk inspections and ensure health and safety rules and regulations are complied with.
Adhere to and maintain policies and procedures of the Maloney's group.
Qualifications & Experience
Minimum 2 years' experience as a chef.
Relevant qualification in hospitality.
Strong, well-rounded experience within the restaurant/bar/pub industry.
Experience with stock take and ordering.
Strong all-round skills in grill and pan sections.
Exceptional interpersonal and communication skills.
Ability to lead and supervise a team and ensure delivery of excellent customer experience.
Ability to work hospitality hours including days, nights, weekends, and public holidays.
