Assistant Restaurant Manager (Fine Dining)
Proven experience as an Assistant Restaurant Manager or senior hospitality role within fine dining, premium, or omakase-style restaurants
Minimum 2-3 years of experience as an Assistant Restaurant Manager or in senior hospitality roles is required.
• Strong wine knowledge is essential, including:
Wine pairing knowledge and the ability to make confident wine recommendations is essential.
• Wine service standards
• Confident wine recommendations and food & wine pairing
• Experience managing wine lists or working closely with sommeliers (highly regarded)
• Solid understanding of Japanese dining culture, omakase service style, or a genuine passion to learn
• Exceptional customer service and attention to detail, with a refined, guest-focused approach
• Strong leadership skills with the ability to train, motivate, and lead FOH staff
• Excellent communication skills and professional presentation
• Ability to manage service flow, reservations, and guest experience in a high-end setting
• Sound knowledge of food safety, RSA, and workplace compliance
• Flexible availability including evenings, weekends, and public holidays
• Fluent English required; Japanese language skills are an advantage but not essential
Australian permanent residency or citizenship is required for this position.
