About the roleNestled in the peaceful and scenic bushland of Wagga Wagga, Caloola Centre provides quality, specialist support to a well-loved community on beautifully landscaped gardens neaby to the shops, clubs, and church.Reporting to the Residential Manager, you will lead and manage staff and resources efficiently to deliver the highest quality and safety in food services.Mealtimes are very important to residents, often a time they look forward to so continuous improvement in the meals we offer is vital. You will need to speak directly to our residents, gaining their feedback and making adjustments.Your creativity with food and expertise in dining environments make this a unique opportunity to enrich the lives of our 80 residents.
Duties include but are not limited to:Overseeing commercial cooking operations & staff supervisionOversee stock for HELF residentsOrdering, invoicing & auditingStock control, preparing menus, adhering to the budgetEnsuring high quality presentation of all meals to residentsMid-High quantity cooking (80 clients) as required for leave coverAssist roster clerk with roster at timesOversee the cafe in ordering, invoices and auditingAssist with special event lunches and happy hours throughout the yearWork with a 4-week rotating menuAttend 1-month residents food focus meetingTeamwork with Leisure and Lifestyle team for food-based activitiesGeneral administrative responsibilities to support day‑to‑day operations.
About youThe ideal candidate will have:At least 5 years’ Chef experience post completion of apprenticeship in a large catering or multi-outlet environmentA Qualification in Commercial Cookery ,Certificate III of Proficiency, or other recognised certification such as armed forces application of knowledge of HACCP, FSANZ and NSW Food Authority standards and principles.Sound competence and experience in the management of high quality food services, e.g. fine dining restaurant or similarSound experience in kitchen management, effective staff leadership, staff development, financial control, and customer serviceSound knowledge and experience in the preparation of menus in accordance with dietary requirementsDemonstrated ability utilising effective oral and written communications skills.
