Melton Country Club (MCC), part of the Essendon Football Club has a rare opportunity for an experienced Sous Chef. We are seeking a driven and highly motivated individual with at least 3-5 years of experience to join our kitchen team. This is a hands-on role where you will work closely with the Head Chef to deliver high-quality meals, maintain smooth kitchen operations, and support the overall success of the venue.
Key Responsibilities
* Support the Head Chef in the day-to-day management of the kitchen.
* Take charge of kitchen operations in the absence of the Head Chef.
* Assist with menu planning, food preparation, and service delivery.
* Manage stock levels and stock rotation, conduct stocktakes and assist with ordering.
* Ensure food safety, hygiene, and workplace health and safety standards are maintained at all times.
* Train, mentor, and support junior kitchen staff.
* Work effectively both as part of a team and independently.
* Be available and flexible to work split shifts, weekends, and public holidays as required.
* Proven capability to independently service functions from start to finish.
Skills & Experience
* Proven experience as a Sous Chef in a fast-paced kitchen environment.
* Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent).
* Strong leadership skills with the ability to step confidently into a leadership role when required.
* Positive and can do attitude.
* Excellent time management, organisational, and communication skills.
* Ability to work unsupervised and under pressure.
* A genuine team player with a passion for food and hospitality.
* Hold a high regard for personal hygiene.
* Maintain strict food safety, sanitation and HACCP Standards.
