Melton Country Club (MCC), part of the Essendon Football Club has a rare opportunity for an experienced Sous Chef. We are seeking a driven and highly motivated individual with at least 3-5 years of experience to join our kitchen team. This is a hands-on role where you will work closely with the Head Chef to deliver high-quality meals, maintain smooth kitchen operations, and support the overall success of the venue.

Key Responsibilities

- Support the Head Chef in the day-to-day management of the kitchen.
- Take charge of kitchen operations in the absence of the Head Chef.
- Assist with menu planning, food preparation, and service delivery.
- Manage stock levels and stock rotation, conduct stocktakes and assist with ordering.
- Ensure food safety, hygiene, and workplace health and safety standards are maintained at all times
- Train, mentor, and support junior kitchen staff.
- Work effectively both as part of a team and independently.
- Be available and flexible to work split shifts, weekends, and public holidays as required.
- Proven capability to independently service functions from start to finish.

Skills & Experience

- Proven experience as a Sous Chef in a fast-paced kitchen environment.
- Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent).
- Strong leadership skills with the ability to step confidently into a leadership role when required.
- Positive and can do attitude.
- Excellent time management, organisational, and communication skills.
- Ability to work unsupervised and under pressure.
- A genuine team player with a passion for food and hospitality.
- Hold a high regard for personal hygiene.
- Maintain strict food safety, sanitation and HACCP Standards.

Key Selection Criteria:

1. Proven experience as a Sous Chef in a busy kitchen environment, with the ability to prepare and present high-quality meals consistently.

2. Strong knowledge of food safety standards, kitchen hygiene, and stock control, with relevant food handling and safety certifications.

3. Ability to work effectively under pressure, manage multiple dockets, and maintain attention to detail during busy service periods.

4. Flexibility to work across a rotating roster, including nights, weekends, and public holidays, with a strong work ethic and team-focused attitude
