Responsibilities
* Plan and develop menus for Suburban Bar & Grill that reflect the venue's diverse offerings, including grill selections, steaks, burgers, pizzas, seafood, pub classics, and function catering, while considering customer preferences, seasonal availability, and venue promotions.
* Estimate food requirements, portion sizes, labour costs, and overall kitchen operational expenses to support profitability and efficient service during daily operations, busy weekends, and special events.
* Order and manage food supplies including fresh produce, premium meats, seafood, dry goods, pizza ingredients, and kitchen essentials to ensure consistent stock availability and cost control.
* Monitor the quality of dishes at every stage of preparation and presentation to maintain Suburban Bar & Grill's standards for taste, consistency, portioning, and visual appeal.
* Discuss food preparation processes, menu planning, stock requirements, and service expectations with Venue Managers, kitchen staff, and front‐of‐house teams to ensure smooth coordination across restaurant, bar, and function services.
* Demonstrate cooking techniques and provide guidance to cooks and kitchen staff on preparation methods, grill operations, plating standards, and efficient kitchen procedures.
* Prepare, season, and cook a broad range of menu items in line with the venue's bar and grill style, ensuring timely service for lunch, dinner, and event customers.
* Explain, implement, and enforce hygiene, sanitation, and food‐safety regulations in accordance with Australian hospitality and health standards.
* Assist in selecting, training, and supervising kitchen staff to maintain a skilled, productive, and customer‐focused team.
* Apply food preservation, freezing, and storage techniques to maintain ingredient quality, reduce waste, and support stock rotation practices.
* Coordinate kitchen operations to meet the demands of regular dining service, takeaway orders, group bookings, and private functions.
* Support continuous improvement of kitchen efficiency, menu performance, and customer satisfaction to uphold Suburban Bar & Grill's reputation as a quality hospitality venue.
Qualifications & Experience
* Certificate III or IV in Commercial Cookery or equivalent experience.
* At least 1 year of previous experience as a Chef in a restaurant, pub, or bar environment.
* Strong knowledge of food preparation techniques and kitchen operations.
* Ability to perform effectively in a busy, fast‐paced environment.
* Understanding of food‐safety standards and safe work practices.
* Excellent organisational and time‐management skills.
* Strong teamwork and communication abilities.
* Flexibility to work evenings, weekends, and public holidays.
* Personal attributes: passion for hospitality and food excellence, reliability, punctuality, professionalism, strong attention to detail, positive and adaptable attitude, ability to work well under pressure.
