Job Description
Job Summary The primary function of this role is to provide nutritionally balanced meals to all land and boat crew, to run an efficient and clean galley, provide training and oversee the role of the kitchenhand and to ensure ordering of all supplies is kept to the standard and cost effectiveness as required by the Company. Summary of Essential Job Functions OPERATIONAL
Operational Responsibilities
Ability to work in the mess hall on land or the boat as required
Roster will include working 1/2 days on crews day off at the farm or on the boat
Apportion and serve food to crew members of up to 45 whilst avoiding excessive waste
Clean, cut, and cook meat, fish and poultry
Cook food stuffs according to menus, special dietary or nutritional restrictions and portions to be served
Plan, develop and oversee menu plans and ensure that are varied, nutritionally balanced and appetising for all staff
Maintain all health, safety and environment standards for the preparation, cooking and service of food including a clean environment
General Duties
Recording inventory of supplies and ability to order stores pertaining to the upcoming menu plans
Being able to wash dishes and change laundry if kitchenhand is busy
Working to a time frame and being flexible when required
Deckhand duties when required
Human Resources
Training new kitchenhand and overseeing their duties as required
Assisting Farm Manager/Vessel Master in interviewing of new kitchenhand applicants, if required
OHS
Maintain a clean and hygienic kitchen facilities according to industry standards
Rotate fresh & frozen stores, keeping fridges and freezers clean and tidy at all times
Finance
Monitor and oversee menus and spending in order to ensure that meals are prepared to a budget.
Minimum Requirements
Evidence of experience in a cooking environment minimum 30 months or appropriate cooling qualifications and 18 months experience Basic Computer skills (Word and Excel) Strong interpersonal and communication skills Experience with budgets (desirable) High level of personal presentation Current Police Clearance not more than 6 months old – not required if visa is current and valid
Desirable Requirements
Statement of Attainment in Follow Workplace Hygiene Procedures Current first aid certificate
Abilities Required
Must be physically fit Ability to work in a remote marine environment
