The Client Itahlia is a popular dining establishment in Sunbury, VIC that serves reasonably priced Italian food and a great atmosphere. Their menu offers a wide range of Italian wood-fired pizzas, freshly made pastas, mains and other fabulous dishes. They are currently looking for an experienced Chef to join their team. The Role This is for a full-time role with an annual salary between $77,000 and $85,000, depending on experience plus superannuation, and will be based in in Sunbury, VIC. Duties will include: Plan, direct, and supervise the food preparation and cooking activities Determine how food should be presented, and create decorative food displays Determine production schedules & staff requirements necessary to ensure delivery of services Estimate amounts and costs of required supplies, such as food and ingredients Inspect supplies, equipment, and work areas to ensure conformance to established standards Instruct cooks and other workers in the preparation, cooking, garnishing & presentation of food Monitor sanitation practices to ensure that employees follow standards and regulations Order or requisition food and other supplies needed to ensure efficient operation Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs Meet with sales representatives in order to negotiate prices and order supplies Prepared and cook food of all types, either on a regular basis or for special guests or functions Supervise and coordinate activities of cooks and workers engaged in food preparation Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers Check the quality of raw and cooked food products to ensure that standards are met Check the quantity and quality of received products Demonstrate new cooking techniques and equipment to staff Record production and operational data on specified forms Requirements At least a Certificate 4 qualifications in commercial cookery Relevant qualifications in cookery or hospitality Has a least 12 months' experience working in a commercial kitchen At least 12 months' experience of menu planning and new dish planning At least 12 months' experience in preparing food to dietary restrictions Must know how and have at least 12 months' experience in grilling over open fire Must know how and have at least 12 months' pizza cooking experience using wood-fired oven At least 12 months' experience in preparing pizza dough from scratch At least 12 months' experience in preparing pastas and sauces from scratch Must be able to work with proteins like pork, beef and seafood Must know how to prepare meals to dietary requirements Experience in kitchen operations and in managing a team
