Quality-driven hospitality group Jacaval Hospitality is reviving a much-loved Carlton landmark butcher shop following the planned retirement and closure of the previous long-standing operator. This is a once-in-a-generation opportunity to lead production, define standards, and help shape the future of Melbourne's next chapter in butchery.
We are seeking an experienced Head Butcher to oversee both retail service and wholesale production — including supply to our own venues — with high standards of craft, consistency, yield control and leadership.
ROLE RESPONSIBILITIES
As Head Butcher, you will:
* Lead entire butchery production across retail and wholesale channels
* Break down whole carcasses and primals with strong yield control
* Set and maintain cutting, trimming, and portioning standards
* Train, mentor, and manage junior butchers and production staff
* Own stock control, ordering, supplier management and product specs
* Maintain food safety and HACCP compliance
* Work closely with restaurant and hospitality teams on specifications, forecasting and supply
* Help develop value-added lines, specialty cuts, and seasonal products
ABOUT YOU
You will ideally have:
* Minimum 8+ years' experience as a qualified butcher
* Proven leadership experience in a retail/wholesale butchery
* Deep understanding of whole animal utilisation and cost management
* Strong organisational and communication skills
* Ability to work collaboratively with hospitality operations
* Experience supplying chefs, venues, or wholesale accounts preferred
