The Role and Responsibilities
As Sous Chef, you will report to the Head Chef and will need to:
* Assist the Head Chef in daily kitchen operations, ensuring smooth and efficient service.
* Be experienced in building, training, and leading a strong team in a high-volume, open kitchen environment.
* Be proactive in service delivery — staying organised, adaptable, and ahead of the game.
* Collaborate closely with the Head Chef and management to develop menus, specials, and creative new dishes.
* Communicate clearly and positively with the kitchen and wider venue team to maintain strong working relationships.
* Deliver high-quality food consistently, aligned with Flight Club's standards and presentation expectations.
* Ensure all food safety standards, policies, and procedures are followed at all times.
* Handle stock control, ordering, and inventory management to minimise waste and maintain cost efficiency.
* Lead by example, creating a fun, energetic, and motivated kitchen culture.
* Maintain a clean, safe, and well-organised kitchen that meets all hygiene and compliance requirements.
* Plan, organise, and manage prep for your section, ensuring readiness for each service.
* Prepare, cook, and present dishes with attention to detail and consistency.
* Support and mentor junior kitchen staff, helping them learn, grow, and progress in their roles.
* Take initiative — bringing new ideas, smarter systems, and improved ways of working to the team.
* Work calmly and efficiently under pressure while maintaining high standards.
* Contribute to a positive, respectful, and collaborative team environment where everyone succeeds together.
Experience as a Chef is important, but attitude and finding the right 'fit' comes first for us.

Pay: $78,000.00 per year
