Job Description

We are seeking a visionary and innovative Executive Chef to lead culinary operations at Novotel Newcastle Beach. This full-time, hands-on role involves overseeing all culinary activities across the restaurant, bar, and conference & events spaces.

* Oversee all kitchen operations, including food prep, quality control, and inventory management
* Lead culinary innovation and deliver exceptional food consistently
* Mentor and inspire the kitchen team, fostering creativity and continuous improvement
* Collaborate with management to ensure seamless front- and back-of-house operations
* Manage financials, including food costs, labor planning, and budgeting
* Ensure compliance with food safety regulations and maintain hygiene standards
* Partner with local suppliers for high-quality, sustainable ingredients
* Stay updated on culinary trends and innovate to keep our restaurant at the forefront of Newcastle's dining scene
* Contribute to marketing efforts and represent the restaurant in media and community events


Qualifications

* Experience in a similar role, preferably within the hotel industry
* Culinary degree or equivalent certification
* Food Safety Supervisor certificate
* Knowledge of food hygiene, HACCP, and health regulations
* Flexibility to work various shifts, including weekends and holidays
* Strong culinary skills and passion for creating exceptional dishes
* Financial acumen with experience in budgeting and cost control
* Excellent communication and interpersonal skills
* Problem-solving and decision-making abilities
* Attention to detail and passion for culinary excellence
* Willingness to adapt to changing trends and needs
