We are seeking an experienced Pizza Chef to take full ownership of our wood-fired pizza section. This is a \"lone wolf\" role designed for a seasoned professional who thrives under pressure and can manage a high-volume station single-handedly. We aren't just looking for a cook; we are looking for a perfectionist who understands the delicate relationship between fire, floor temperature, and dough chemistry.
Core Responsibilities:
* Manage the entire pizza line—from stretching and topping to firing and plating—independently during peak service windows.
* Maintain precise control over the wood-fired oven. You must be able to read the flame and floor heat, adjusting your technique based on the oven's recovery time and thermal mass.
* Recognize and adapt to how different ambient temperatures and humidity levels affect the dough's performance once it hits the stone.
* Ensure every pizza meets strict standards for crumb structure, moisture retention, and topping caramelization.
* Deep understanding of fermentation, hydration levels, and how heat transfer impacts different dough profiles.
* The ability to produce the 1st pizza and the 100th pizza with identical precision.
