About Us
We are a growing hospitality group operating two established, high-turnover restaurants in Carnegie, Melbourne. With combined weekly revenues exceeding $140K and ambitious plans ahead, we're looking for a senior operator to lead across both venues while the owner focuses on expansion.
About the Role
This is a hands‐on leadership role overseeing all operations across both restaurants. You'll manage venue managers, drive profitability, and ensure consistency in service, culture, and financial performance. You'll report directly to the owner.
Key Responsibilities
* Full P&L accountability across both venues
* Direct oversight of venue managers and all operational staff
* Set and enforce labour budgets, COGS targets, and margin KPIs
* Approve all hiring, terminations, and wage decisions
* Develop and implement rosters, systems, and SOPs
* Manage supplier relationships and negotiate contracts
* Deliver weekly financial reporting to ownership
* Drive revenue growth through service standards, marketing, and community engagement
* Ensure compliance with food safety, RSA, WHS, and all regulatory requirements
* Build a culture of accountability and performance across both sites
What You'll Bring
* 5+ years in senior hospitality management (multi‐site experience preferred)
* Proven track record of managing labour costs to ≤32% and delivering strong EBITDA
* Commercial acumen — you read a P&L like a menu
* Strong leadership — you can walk into an existing team and earn respect quickly
* Experience managing managers, not just staff
* Systems‐oriented — you build processes that don't depend on one person
* Current RSA and Food Safety Supervisor certificate
* Ability to work autonomously with minimal owner involvement
