About the Role
We are seeking a highly experienced and professional Restaurant Manager to lead the KOTO team. You will oversee all aspects of front-of-house operations, maintain the highest service standards, and work closely with the kitchen and executive team to deliver an outstanding dining experience.
This is a hands-on leadership role suited to someone who thrives in a fast-paced, high-end environment and has a genuine passion for hospitality and guest experience.

Key Responsibilities
* Lead and manage all front-of-house operations.
* Recruit, train, and mentor a high-performing service team.
* Maintain service excellence and consistency across all shifts.
* Implement and monitor systems and workplace procedures.
* Manage budgets, rostering, and cost control effectively.
* Ensure compliance with WHS, RSA, and food safety standards.
* Collaborate with senior management to achieve business goals.

Skills & Experience
* Minimum 5 years' experience in a similar management role within fine dining or premium restaurants.
* Diploma qualification in hospitality or equivalent industry experience.
* Proven leadership skills with the ability to inspire and motivate a team.
* Strong business acumen and understanding of financial controls.
* Excellent communication, organisation, and time management skills.
* Sound knowledge of Japanese cuisine, premium beverages, and wine service preferred.
* Current RSA Competency Card and full Australian working rights are essential.
