Annual salary: $77k + superannuation
These are full-time roles, working 38 hours per week over 5 days.
Task & Responsibilities
* Executing cooking processes with precision, balancing timing, temperature, and flavour profiles to deliver consistently exceptional results.
* Directing the preparation and plating within their section, ensuring accuracy, consistency, and high visual appeal in every dish.
* Instructing and mentoring section staff in advanced cooking skills, efficient work practices, and the restaurant's signature techniques.
* Enforcing strict adherence to food safety, sanitation, and workplace health protocols.
* Overseeing the preservation and storage of specialty items, including freezing, vacuum-sealing, and other methods to maintain peak quality.
* Collaborating with the Head Chef and management to design and refine seasonal menus that reflect the restaurant's culinary style and fine dining standards.
* Determining ingredient quantities and staffing needs for each service, sourcing premium produce, and coordinating timely deliveries from trusted suppliers.
* Liaising with kitchen and front-of-house teams to maintain smooth service flow and resolve preparation or service concerns.
* Recruiting, onboarding, and developing kitchen team members while fostering a culture of excellence and continuous improvement.
Qualification & Experience
* A highly relevant AQF Associate Degree, Advanced Diploma or Diploma (ANZSCO Skill Level 2) + 1 year of full-time work experience in the last 5 years.
* If the applicant has no relevant qualification, at least three years of highly relevant work experience in the last 5 years MAY substitute for the formal qualifications.
* Food Safety training certificate mandatory
