About Gilson
Gilson is a highly regarded, high-volume all-day Italian restaurant nestled on Domain Road in South Yarra, directly opposite the Royal Botanic Gardens. Gilson is a local institution celebrated for its relaxed, friendly atmosphere and commitment to simple, classic Italian-focused cuisine with a modern Australian edge.
We operate seven days a week, serving a bustling service across breakfast, lunch, and dinner. The coffee service is a critical part of our identity, especially during our high-traffic breakfast and brunch periods.
The Opportunity: Barista
We are seeking an established and passionate Barista or a highly skilled and experienced Barista ready for their next step in a high-pressure, quality-driven environment.
This is a pivotal front-of-house role requiring exceptional technical skill, speed, and dedication to maintaining our coffee standards across a demanding service schedule. You will be responsible for ensuring every cup meets the Gilson standard.
We are a fast paced- high volume venue going through 80kg+ of beans daily.

Key Responsibilities:
The successful candidate will join our dedicated barista team in operations of the coffee station, including:
* Technical Excellence: Dialling in espresso daily, executing latte art, and consistently producing high-quality milk texturing and all coffee beverages with speed and accuracy.
* Operational Flow: Managing the fast-paced workflow during peak service periods (especially breakfast/brunch), ensuring efficiency and minimal wait times.
* Quality Control: Overseeing bean inventory, ensuring proper machine maintenance, cleanliness, and impeccable hygiene at the coffee station.
* Customer Experience: Engaging with customers, handling custom orders, and educating the team and guests on our coffee offerings.
Skills & Experience Required:
* Demonstrated experience as a high-volume barista, preferably in a premium or all-day dining environment.
* Strong technical proficiency with espresso extraction, milk chemistry, and workflow management.
* Proven ability to work calmly and efficiently under extreme pressure.
* Exceptional time management and organisational skills.
* A true passion for hospitality, customer service, and the craft of coffee.
