About Maggio's Italian Bakery & Pasticceria
Maggio's is one of Sydney's busiest Italian bakeries and patisseries. We are seeking an experienced Senior Pastry Chef to lead our Petite Gâteaux & Entremets section in a high-volume production environment. This role suits a confident pastry professional with strong technical skills, leadership experience, and the ability to run a section independently. In therole you will be fully responsible for the day-to-day operation of the Petite Gâteaux & Entremets section, ensuring consistent quality, organisation, and efficiency.
Key Responsibilities:
* Preparation, assembly, and decoration of petite gâteaux and entremets
* Managing daily and weekly production prep lists
* Ordering ingredients and maintaining correct stock levels
* Conducting regular stocktakes and controlling wastage
* Organising workflow, timelines, and section cleanliness
* Training, guiding, and supervising staff within the section
* Maintaining high standards of presentation, consistency, and food safety
About You
* Minimum 4-5 years pastry experience, with proven section leadership
* Strong technical ability in mousse work, glazing, finishing, and decoration
* Experience managing a pastry section independently
* Confident with ordering, prep planning, and stock control
* Organised, reliable, and calm under pressure
* Strong leadership skills with a hands-on approach
* Available for early starts and weekends
