Harrup Park Country Club has an exciting opportunity for a professional, proactive and motivated Sous Chef. Challenge the norms of clubs by bringing ingredients to life at Harrup Park. Create and own a culturally diverse menu that moves us beyond the limits of region.

Help to continue our push towards menus that capture the imagination of our diverse member base, whilst furthering your career in an environment that promotes innovation and creativity.

We are looking for someone that will be actively involved in delivering the strategic direction of both the functions and food departments whilst leading and guiding our passionate kitchen team.

Responsibilities

- Lead and guide the kitchen team and contribute to the strategic direction of both functions and the food department.
- Actively deliver culturally diverse menus that move beyond regional limits.
- Develop menus that capture the imagination of a diverse member base and promote innovation and creativity.
- Ensure optimum Operational Excellence within all kitchens.
- Ensure the Club’s policies and procedures are met and followed by the Kitchen Team.
- Manage administration requirements of the position, including rosters, cost control and menus.
- Be humble, hungry and smart; coach, train and motivate the team so they feel valued and heard.
- Build relationships with internal and external stakeholders; maintain strong communication and customer service.
- Maintain a spotless kitchen and uphold food safety, hygiene practices and compliance expectations.

Qualifications and qualities

- A minimum of 3 years’ experience as a Sous Chef or Junior Sous Chef in a similar environment; strong operational capability and full qualification.
- Flexible work ethic with a passion to create unique and memorable dining experiences.
- Flair, enthusiasm and passion to create excellent cuisine.
- A strong desire to achieve business goals and targets.
- Understanding of administration requirements of the position – rosters, cost control and menus.
- Eye for detail and service orientation.
- Proven leadership qualities and ability to coach, train and motivate the team.
- Ability to build relationships and rapport with internal and external stakeholders.
- Strong communication and interpersonal skills and a passion for quality customer service.

The Club

Harrup Park and Great Barrier Reef Arena is the leading sport, recreation, and entertainment venue in the Mackay region. The venue prides itself on providing the highest quality food, beverage, gaming, and event offerings available in Mackay. We have a modern function centre, 200 of the latest gaming machines, bars, café, and the best outdoor garden bar in the region. Alongside the recently completed Great Barrier Reef Arena, a world class international cricket and AFL facility hosting top-tier cricket matches, AFL and major concerts.
