Restaurant Manager (Hotel F&B Operations)
A rare opportunity has arisen for a seasoned professional to showcase leadership skills and put their stamp on the Food & Beverage operations at Cairns Harbourside Hotel.
As our Restaurant, Bar & Events Manager, you'll lead day-to-day operations across Harbourside Bar & Kitchen, our conferences and events offering, and in-room dining — while mentoring a close-knit team and ensuring smooth, high-standard service across all touchpoints.
This is a varied and hands-on role, ideal for a hospitality leader who thrives in a hotel setting and enjoys the rhythm of shifting between breakfast, bar, conferencing, and admin as part of a strong, supportive team.
A bit about the role
Reporting to the Operations Manager and General Manager, you'll take charge of our Food & Beverage operations with an active leadership style. Your week includes:
Schedule
* 2 evening shifts
* 2 breakfast shifts
This structure allows you to provide real-time leadership across different service periods and offer support when supervisors are off shift. You'll work alongside the team, not behind the scenes — setting the tone for consistent guest service and high team morale.
What You'll Be Doing
* Oversee operations across the restaurant, bar, in-room dining and events
* Uphold our 'paddock to plate' and 'vineyard to glass' philosophy
* Lead and mentor a high-performing, multi-skilled F&B team
* Manage supplier relationships, stock, orders, and cost control
* Coordinate functions and event delivery with strong attention to detail
* Handle guest feedback, team engagement and service recovery
* Monitor compliance, safety, hygiene, and brand standards
* Work closely with other departments to deliver smooth hotel-wide service
A bit about you
* Minimum 2 years' experience in a similar hotel or hospitality venue
* Strong working knowledge across restaurant, bar, conferencing and room service
* Excellent communicator and team motivator
* Able to stay calm, clear and focused in fast-paced or changing situations
* Strong organisational and planning skills
* Flexible to work across a 7-day rotating roster
* RSA and Food Handling certificates
* Full Australian working rights
