The Sous Chef supports the Head Chef in the delivery of high-quality food production and kitchen operations at Fiorini's. The role is responsible for supervising kitchen staff, maintaining food standards, ensuring efficient service, and contributing to menu planning, stock control, and kitchen hygiene. The Sous Chef plays a key role in maintaining the restaurant's culinary reputation and guest satisfaction.

Task & responsibilities
Plan, organise and supervise daily food preparation and cooking activities.
Support menu planning and development, including cost control and seasonal updates.
Supervise and train kitchen staff to maintain high performance and consistency.
Monitor stock levels, order ingredients, and manage inventory efficiently.
Maintain kitchen hygiene and ensure compliance with HACCP and food safety regulations.
Ensure food presentation and portioning meet the restaurant's premium standards.
Collaborate closely with management to deliver exceptional guest experiences.
Assist in rostering, supplier coordination, and managing kitchen workflow.
Qualification & experience
Minimum of 2 years' experience in the role in a busy restaurant environment.
Cert IV or Diploma in Commercial Cookery or relevant experience.
Proven understanding of Italian cuisine and traditional cooking methods.
Strong leadership, communication, and organisational skills.
Ability to work efficiently under pressure while maintaining attention to detail.
Thorough knowledge of food safety and hygiene practices.
