Key Accountabilities
As Head Chef, you will be the culinary leader behind Tayim, Harbour Rocks Hotel's signature restaurant, where modern Levantine cuisine takes centre stage. This is a highly operational, hands‐on role, with the majority of your time dedicated to leading the day‐to‐day culinary execution of Tayim while also overseeing food offerings across Eric's Bar, in‐room dining and hotel events. Working closely with the General Manager and Food & Beverage Operations Manager, you will help shape the next chapter of Tayim, delivering a dining experience that celebrates the flavours, traditions and hospitality of the Levant through a contemporary lens.
Key responsibilities
* Leading the day‐to‐day kitchen operation of Tayim, ensuring exceptional food quality, consistency and presentation.
* Developing and evolving seasonal menus that remain true to Tayim's Levantine identity while reflecting local produce and guest preferences.
* Maintaining a strong presence in service, coaching and supporting the kitchen team during busy periods.
* Driving food quality, kitchen efficiency, cleanliness and compliance standards across all outlets.
* Recruiting, developing and mentoring a high‐performing culinary team and creating a positive kitchen culture.
* Managing labour costs, food costs, ordering and stock control to achieve financial targets.
* Working collaboratively with the wider hotel team to deliver memorable restaurant, bar, in‐room dining and event experiences.
* Identifying opportunities to enhance the guest experience and grow food and beverage revenue across the hotel.
What You'll Bring
* Previous experience as a Head Chef or Senior Sous Chef in a premium restaurant, boutique hotel or quality hospitality environment.
* Strong experience working with flavour‐led cuisines, particularly Middle Eastern, Levantine, Mediterranean or similar culinary traditions.
* A genuine passion for ingredient‐driven cooking, shared dining experiences and bold, vibrant flavours.
* A hands‐on leadership style with a willingness to be present in service and lead from the front.
* Proven ability to develop menus, train teams and deliver consistently high food standards.
* Strong commercial acumen, including food cost control, labour management and kitchen profitability.
* Excellent organisational and communication skills, with the ability to collaborate across departments.
* A commitment to creating memorable guest experiences through exceptional food and hospitality.
