Overview
As a Sous Chef, you will utilize your creative flair and passion for food to ensure high quality food production for hotel outlets and events, which meets our Brand Standards.
You will manage the Kitchen Team under the direction of the Chef De Cuisine/Food, Beverage and Kitchen Manager, ensuring quality is produced consistently.
You will ensure the team prepare the required food for various culinary operations within the hotel, while ensuring all hygiene, HACCP and Work Health and Safety (WHS) requirements are consistently met.
What will I be doing?
Ensure a high level of clear and concise communication is maintained with all other hotel departments
Attend and contribute to meetings and briefings as per schedule
Makes a positive impact, taking personal responsibility and initiative to resolve issues, always clearly communicating with guests, suppliers and team members
Exhibits exemplary personal appearance and attitude, maintains highest standards of hygiene and quality assurance practices
Perform any other related duties and special projects as assigned by the Hotel
Ensures that all HACCP records and procedures are taken and followed on a daily basis as per Hilton Worldwide food safety guidelines and manual
Ensures correct handling, quality control and storage of all incoming products
Take reasonable care for the health and safety of themselves and others (team members, contractors, guests, members of the public) at the hotel
Ensures the highest quality of any product served

A high level of interpersonal skills in both oral and written communication

Time management and ability to follow directions
Able to work on a rotating roster, both day and night shifts
Ability to travel to and from the hotel at varying times
Passionate, innovative, exciting initiatives delivered with consistency and excellent attention to detail
